Ingredients
1 Whole white fish in our case ruby snapper
2 Fresh lime/lemon sliced
Light soya sauce
Olive oil
1/8 teaspoon tomato paste
Pinch of salt & pepper
1 Onion sliced
2 Fresh tomatoes sliced
Some chopped fresh chives
Preparation
Preheat oven to 180.
Place fish in an baking dish. With a sharp knife do two insertion on other side of the fish flesh. These insertion will assist in make sure the fish is cooked to perfection. Stuff fish with sliced onion, tomatoes and lemons. Combine soya sauce, tomato paste, olive oil, pepper, salt in a small bowl, and spread over fish. Sprinkle with chives and drizzle a little more olive oil. Bake at 180° for 45 minutes or until fish flakes easily when tested with a fork. Adjust the baking time depending on the thickness of the fish.
Once cooked remove from oven cover with allumium foil and leave to rest until ready to serve. I would recommend serving the fish with steamed rice, your favourite green vegetable or a mix salad.
