We all love yellowfin tuna, right? YouTube fishing star Robert Arrington from AKA “deermeatfordinner” shows us how he catches and cooks yellowfin, Louisiana style!
After an early morning meetup at the docks, the guests and crew board one of the many fully kitted Freeman center consoles the boys at the Mexican Gulf Fishing Cartel use for their charter services.
Guests and crew load up on live bait, specifically horn bellies, at just daybreak and targeted fish hanging around shrimp boats. The favored technique of this session is pitching live baits close to the shrimp boats and hang on for dear life.
They hook up just minutes after pitching the first few baits in. After almost 2 hours, the team finally get the gaffs into the tuna and haul up a massive tuna!
Once at the dock, deermeatfordinner proceeds to clean and prep the fish for cooking.

Recipe 1 – Tuna Tartare
Ingredients:
- 250g tuna steak
- Salt and pepper
- Everglades All purpose seasoning (https://www.evergladesseasoning.com/collections/everglades-all-purpose-seasoning) / Your favorite fish seasoning powder
- Cilantro
- Chopped ginger
- Sesame oil
- Soy sauce
- Sesame seeds
Preparation:
- Chop your tuna steak into chunky 5cm pieces.
- Season with salt and pepper to taste
- Season with Everglades all purpose seasoning or your favorite fish and chicken seasoning.
- Place your seasoned tuna chunks into a medium sized pot
- Add some cilantro and fresh ginger and sesame seeds
- Put 2 tablespoons of sesame oil
- Add 2 tablespoons of soy sauce
- Mix well and cover
Recipe 2 – Grilled Tuna Steaks
Ingredients:
- Tuna cut into 250g steaks or preferred serving size
- Salt and pepper
- Everglades All purpose seasoning / Your favorite fish seasoning powder
- Lemon (optional)
- Season your tuna steaks with salt, pepper and Everglades all purpose seasoning
- Place on a pre-heated grill approximately set to a medium heat if cooking on coals
- Flip the steaks once the color change reaches just before the middle of the steak
- Cook to your preferred doneness
- Squeeze fresh lemons over cooked tuna steaks (optional)
These are easy and awesome recipes that everyone can do after a great day of fishing for tuna. Ingredients are cheap and easy to find plus the prep work and cooking are quick and easy. Perfect for a beach picnic after a day of fishing.
